Wine making is perfectly in line with the work on the vines. Thus we want to intervene as little as possible while guiding the fruits of our labor in the best way. It requires a quality harvest by picking manually the best grapes.
Then they are pressed in the most delicate way according to the flow of juice in order to get a regular juice extraction. The alcoholic fermentation is slow and continues in small containers.
The wines mature on fine lees and are then racked off their lees via gravity. Everything is done with respect and precise movements. The bottling takes place at the end of May. All wines are immediately bottled with a cork except for Brut Réserve bottles. Then our wines are kept in cellars between 2 and 8 years (depending on the type of wine).
The disgorgement is done with a maximum of human control. We compare the clarity and color, we smell each bottle after the second fermentation with a cork and we moderate dosage with traditional liquor.
